This boneless, free-range turkey is filled with a stuffing of apricots, herbs, and spices, perfect for a special holiday touch.

COOKING INSTRUCTIONS

Preheat the Oven:

  • Preheat your oven to 180°C (350°F).

2. Prepare the Turkey:

  • Remove the stuffed turkey from the fridge 30 minutes before roasting to bring it to room temperature.
  • Pat the turkey skin dry with paper towels.
  • Brush or spray the turkey with olive oil or melted butter.

3. Set Up the Roasting Pan:

  • Place the turkey on a rack in a large roasting pan. This ensures even cooking.
  • Pour 1 cup of chicken or turkey stock into the bottom of the pan to keep the turkey moist during roasting.

4. Roast the Turkey:

  • Roast the turkey in the preheated oven for 2 hours to 2 hours 15 minutes, or until the internal temperature reads:
    • 74°C (165°F) in the thickest part of the turkey (meat)

5. Baste the Turkey:

  • Every 30 minutes, baste the turkey with pan drippings or a mixture of melted butter and stock. This helps keep the skin golden and the meat juicy.

6. Cover to Prevent Over-Browning:

  • If the skin starts to brown too quickly, loosely cover the turkey with aluminum foil for the remainder of the cooking time.

7. Rest the Turkey:

  • Once the turkey reaches the proper internal temperature, remove it from the oven and transfer it to a cutting board.
  • Tent loosely with aluminum foil and let it rest for 15-20 minutes. This allows the juices to redistribute, ensuring moist meat.

8. Carve and Serve:

  • Slice the turkey carefully into even portions, ensuring each slice contains a bit of stuffing.
  • Garnish with fresh parsley for a festive presentation.
