This WA pork loin is wrapped in bacon and seasoned with our signature mustard and garlic blend for a savoury holiday dish.

COOKING INSTRUCTIONS

  1. Preheat the oven:
    • Preheat the oven to 180°C (350°F).
  2. Prepare the pork loin:
    • Remove the pork loin from the vacuum bag and allow it to come to room temperature for about 30 minutes.
    • Place the pork loin on a rack in a roasting tray.
  3. Roasting:
    • Roast the pork loin in the preheated oven for 60-75 minutes, or until the internal temperature reaches 70°C (160°F) when measured with a meat thermometer.
  4. Resting:
    • Remove the pork loin from the oven and let it rest for 10-15 minutes before slicing.
  5. Serving:
    • Slice and serve with your preferred side dishes. The bacon should be crispy, and the pork loin tender.
